An easy to make summer dessert from Cherry of ParsleySoup.co.uk

Vegan Vanilla and Banana Ice Cream

340g/12oz (1 pack) soft tofu
50 ml (2 fl oz) soya milk
50 ml (2 fl oz) vegetable oil
4 level tablespoons caster sugar
1 ripe banana
2 teaspoons of vanilla essence

1) Put tofu and peeled banana in blender until smooth
3) Add other ingredients and blend again
4) Pour into ice-cream maker and freeze to perfection.
