An Award, A Meme and Pies

I was wondering what to post next and then it was decided for me. I received another award and was tagged for a meme. I was also asked to post some Vegan pie recipes. So here goes....

Almond Berry-licious Pie
From The Vegan Chef (Love her recipes)

For Pie Crust:
1 1/2 cups sliced almonds
3/4 cup sunflower seeds
2 cups dates, pitted
1/2 cup dried banana chips (available at grocery and health food stores, or dehydrate banana slices)
1/2 tsp cardamom
1/4 tsp cinnamon

For Berry Filling:
2 1/2 cups blueberries
1 cup strawberries
1/3 cup dates, pitted
1/2 tsp cardamom
1/4 tsp cinnamon

Garnishes:
fresh blueberries
sliced strawberries
sliced almonds


Begin by preparing the pie crust. In a food processor, place the almonds and sunflower seeds, and process for 2-3 minutes to form a fine meal. Add the remaining pie crust ingredients, and process for 5-7 additional minutes or until the mixture comes together. Transfer the mixture to a 9-inch pie pan. Using your hands, press the mixture evenly over the bottom and up the sides of the pie pan. Place in the refrigerator and allow to chill for 20-30 minutes or until firm. Wipe out the food processor for use in preparing the filling. Place all of the filling ingredients in the food processor and process for 1-2 minutes to form a smooth puree. Pour the filling into the chilled pie crust. Place the pie in the refrigerator and chill for 30-45 minutes or until filling is set and slightly firm. Score the top of the pie into 8 pieces and decorate each piece of pie with a few fresh berries and sliced almonds. Makes: One 9-inch pie or 8 pieces


Unbelievable Vegan Chocolate Cream Pie

"Absolutely no one will believe that this is made with tofu!!"

1 prepared pie crust
4 squares of baking chocolate
2 tbsps water
1 10.5-oz package of extra-firm silken tofu
1/3 cup vegetable oil
1/2 cup granulated sugar
1/2 tsp salt
2 tsps vanilla extract

Place all four squares of chocolate in a shallow, microwave-safe bowl with water. Microwave on high for two minutes. Meanwhile, add all remaining ingredients to the blender. Remove chocolate from microwave and immediately stir the chocolate with a fork to achieve a smooth paste. Add this to the blender with the other ingredients and blend until smooth, stopping to scrape down the sides of the blender with a plastic spatula when necessary. Immediately transfer the chocolate tofu mixture to pie plate and chill for at least six hours, but overnight is best. Serve cold.


Vegan Fuji Apple Pie
From Fuji Farm Fresh To You

Pie:
6 oz. can unsweetened apple juice concentrate
1 tbsps non-hydrogenated vegan margerine
2 tbsps cornstarch or arrowroot
1 tsp cardamom
4-5 apples
1/2 tsp each: cinnamon, nutmeg, salt
1 prepared 10" deep dish pie crust w/extra for lattice topping (recipe follows)

Easy Vegan Pie Crust:
1-1/2 cups flour (white, whole wheat pastry or combo)
1/2 tsp sea salt
2 tbsps vegan sugar or date sugar
1/2 cup oil
2 tbsps soymilk or orange juice

Pie: Heat the juice and thicken with cornstarch. Add margarine, and spices. Peel and slice the apples. Dump into pan of hot juice and stir. Pour into prepared pie shell and top with lattice. Bake at 350C for 45 minutes.

Pie Crust: Mix dry ingredients. Add liquids and mix with a fork. Pat into 9" pan with fingers. If pre-baked crust is needed, bake at 425 degrees for 10-12 min.


Tom's Quick Canola Pie Crust
From Boutelle
Not quite as flaky as normal flaky pastry but contains no hydrogenated oils and does not require chilling in advance.

1 cup canola oil
3/4 cup water
4 cups white flour
2 tsps vegan baking powder
1/4 tsp salt

Mix the dry ingredients thoroughly to combine the baking powder with the flour. Add the oil and water. Mix until a dough forms. Try not to knead it while forming it into a large ball. If the dough is too dry, add water a tablespoon at a time. Separate the dough into two equal balls for easier rolling; each portion will yield a single 9-inch pie crust or one dozen small tart shells. Roll the dough out right away and press into pie plate. You're ready to add your filling and bake your pie!


Basic Graham Cracker Crust Recipe
From Jolinda Hackett, Your Guide to Vegetarian Cuisine, About.com

8-10 whole graham crackers
1/4 cup sugar
1/3 cup Vegan margarine, melted

Place the graham crackers into a plastic bag and use a rolling pin to make fine crumbs. Pour the crumbs into a bowl and add the sugar and melted margarine. Stir well. Pour the mix into a pie pan and use your hands or the back of a large sppon to press the mixture into the bottom oand sides of the pie pan. If you need to pre-bake the pie crust, bake for 8 minutes at 375 degrees. Otherwise, chill the crust before using.

Congratulations on your award, Jackie! These recipes look great! That recipe for the almond berry pie crust looks amazing,I can't wait to try it. It looks as if I could use it for all sorts of unbaked pies.
